Quiche filled with whatever was in the fridge that day

A few days ago I had my sister in law over for lunch. Ended up making a quiche with pumpkin, spinach and swiss brown mushrooms. Finally got the pastry bit right using baking paper and rice to weigh it down when I cook it before the filling goes in.

Really been into cooking lately and love trying out new recipes. Discovered an amazing food blog called Unfortunately it’s all in Norwegian, but it contains heaps of recipes I really would like to try out one day. Croquembouche, a French cake often used in weddings, is high up on that list. This cake is also described in the book called “Lunch in Paris” by Elizabeth Bard. Looks quite impressive.
